We're seeking a highly organized, experienced & passionate individual to join us as executive Sous Chef at El Corazon Keswick. In this role, you'll support the Chef in leading the kitchen team in the execution of recipes for our Latin Inspired restaurant & bar.
This is a full time, salaried position offering a salary range plus tips, bonuses + benefits and 2 weeks paid vacation. Pay is based on experience.
Effective Start Date - Summer 2024
*Responsibilities include:*
*Overall kitchen management responsibilities*
* Conduct and manage business operations with the objective of maximizing sales and minimizing expenses
* Supervise staff to achieve the above objective
* Provide hands on support in all BOH departments when needed to maintain adequate staffing levels.
Develop, plan and execute operational plans to impact the following areas:
* Back-of-House (?BOH?) Operations including product and service determination, costing and pricing, policy and procedure development and implementation
* Food and supplies inventory and control and reporting
* Staff training, scheduling and supervision
* Design and implementation of cleaning schedule
* Make sure all kitchen equipment is in good working order
* Maintain a high level of repair for entire kitchen (all cooking appliances, refrigeration units, dishwasher, small appliances)
* General kitchen maintenance and cleanliness (regular garbage pickup, recycling pick-up, grease trap cleaning)
*Inventory management and control*
* Weekly counting of inventory
* Weekly inputting of inventory into excel
* Assessing COGs, investigating and impacting discrepancies.
*All Weekly product ordering*
* Ensuring that all orders are placed on time and to budgets
* Constantly evaluating and updating par levels for all food and food prep related items
*Scheduling and Staff Management*
* Providing hands on support in all BOH areas to ensure adequate staffing levels
* Consistency: Ensuring that food quality is kept consistently high and that all staff are executing consistent dishes.
* Implementing and monitoring all dress code and uniform policies and standards
*Venue Repair, Maintenance and Cleanliness*
* Make sure all BOH equipment is in good working order
* Maintain a high level of cleanliness for all equipment ? schedule routine maintenance for all equipment
* Ensuring that all daily and weekly cleaning duties are met to our standards
*Health Inspections*
* Ensuring that all AHS guidelines are met and that the restaurant is operating to their standards
* Aware of monthly health inspections and follow ups to limit infractions
* All cleaners must be labeled clearly for staff both, FOH and BOH
* Ensure all prep stations have labeled, visible cleaners
* All hand washing stations are stocked with hand towels and soap
*Communication and Delegation*
* Daily log notes to ensure communication between all management
* Updating pre shift notes between shifts
* Delegation of noted tasks to supporting management
Job Type: Full-time
Pay: $32,500.00-$38,500.00 per year
